Portable Snacks
Chocolate-Coconut Bars
Ingredients:
- 2 c. pitted dates
- 1/2 c. dried and unsweetened coconut flakes
- 2 c. raw walnuts (or other nuts and seeds)
- 1/4 c. cacao powder
Directions:
- Combine all the ingredients in a food processor.
- Blend until the ingredients are incorporated and the consistency is grainy. If the mixture is not sticky enough, add more dates. If it is too mushy, add more nuts.
- Pour the mixture into a pan or dish and press down. Cut into bars.
- Alternatively, you can roll the mixture into small, bite-sized balls.

Granola Bites
Ingredients:
- 1/4 c. rolled oats
- 1/2 c. unsalted walnuts (or other nut)
- 1/2 c. dates (or raisins)
- 1/2 - 1 Tbsp. all natural, unsalted peanut butter
- 1/2 - 1 Tbsp. honey
Directions
- Mix together the oats and walnuts in a blender or food processor until chopped.
- Add the dates, peanut butter, and honey. Blend or process until combined.
- Roll mixture into snack-sized balls.

Fruit-Based Snacks
Snack Idea 1
Ingredients:
- 1 sliced apple
- Drizzle of lemon juice
- 1 Tbsp. peanut butter
Directions
- Slice the apple, drizzle lemon juice on slices, and store in a portable plastic container. Store the peanut butter in a small plastic container for dipping.
Snack Idea 2
Ingredients:
- 1 kiwi
- 1/4 c. strawberries or raspberries
- 1/4 c. granola
Directions
- Slice kiwi and mix with berries and granola. Store in a plastic container.
Snack Idea 3
Ingredients:
- 1/2 c. oat or bran cereal
- 1 Tbsp. sliced almonds or chopped walnuts
- 1/4 c. dried cranberries and raisins
Directions
- Add all ingredients together in a portable plastic container or bag. Close the container or bag and shake to mix.
